Apple and parsnip soup – vegan

This is a quick and easy vegetarian and vegan soup. Dress it up with croutons or serve steaming in a mug.

Parsnip and apple soup

You can use any spice blends you like, but ras el hanout works very well with veggies.

The soup is gently warming with just a hint of natural sweetness.

Apple and parsnip soup

Rosemary
A veggie soup, easy to make
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • 4 carrots sliced
  • 2 parsnips sliced
  • 1 yellow or orange bell pepper
  • 2 apples peeled and sliced
  • 3 vegetable stock cubes
  • 1.2 litres water
  • 1/2 to 1 teaspoon ras el hanout spice depending on taste
  • Freshly ground black pepper to taste

Instructions
 

  • Chop all the veggies and put them in a saucepan with the water and stock cubes.
  • Bringing to the boil then turn down and simmer until the veggies are tender.
  • Add the spice and pepper and allow to simmer for a few more minutes
  • Remove from the heat and blend until smooth.
  • Adjust seasoning to taste.
